物化性质
无色至白色结晶性粉末，无臭。有甜味，甜度约为蔗糖的70%。溶于水，微溶于乙醇，不溶于。具有旋光性。外消旋型（dl-）氨基丙酸Melting_point295℃（分解），200℃时升华。左旋（l-）-2-氨基丙酸Melting_point3% NaC1297℃（分解）；右旋（d-）体Melting_point295℃（分解）。双歧杆菌BS培养基左旋（l-）体的氢氯化物为棱形结晶体，Melting_point204℃（分解）；左旋（l-）体的N-乙酰基物结晶体Melting_point116℃；其N-苯基物结晶体Melting_point152-154℃。
